Its natural silica and oil content make it resistant to water, warping, and bacteria, so it tolerates kitchen humidity better than maple and needs oiling less often. In independent head-to-head testing it rated best overall for the balance of knife-gentleness, size, and price. Like all wood, it doesn't shed microplastics into food.
